Brygdag: 25/7 2010. En 1-1 kopi af Olestout. Dog følgende ændringer: 1) at jeg benytter T-58 til gæringen denne gang. Håber at jeg kan producere en mindre sød stout denne gang. 2) at jeg benytter dekoktionsmæskning 3) at jeg holder lidt igen med vandet for at hæve alkolhol-% 4) humleprogrammet ændret lidt Bryggryden fyldes helt med malt og vand. I alt tilsættes ca. 21 liter vand. 55 grader er blandingen. Mæsker ved denne temperatur i 30 minutter. Udtager 10 liter som opvarmes til 90 grader og hældes tilbage i gryden. Står i mæskekasse ved 67 grader i 90 minutter. Herefter et temp. dalet til 64,5 grader. Mash out v. 76 grader i 15 minutter. 14 liter sparge v. 78 grader. Undervejs i processen kommer jeg lidt i tvivl om denne øl nu også ender som en stout alligevel... Jeg har planlagt at bruge T-58, og har lavet gærstarter, til gæringen, men det slår mig at T-58 jo er en typisk belgisk gærtype. Så jeg ved ikke rigtig om jeg rammer stout-stilen. I stedet vælger jeg at give den lidt mere gas mht. humlen, så jeg rammer ca. 60 IBU. Dette i håbet om at lave noget som ligner 'Adam' fra 'Hair og the Dog" http://www.hairofthedog.com/adam-detail.html. Om det så lykkes må tiden vise. Benytter udelukkende Brewers Gold. God duft! Må helt sikkert prøve at lave en IPA af den humle en dag. Mht. stout så vil jeg prøve at brygge en stout næste gang ved brug af US-05, der skulle give en renere og mere skarp smagsprofil. Står under låg og køler af til næste dag. 26/6: Gærstarter tilsættes v. ca. 32 C. 25 liter urt, OG = 1070, hvilket giver en effektivitet på 67%... Ikke imponerende. Jeg tror jeg vil til at måle pH under processen. Det kan gøres meget bedre end 65-70% ved jeg (fra Finn). Vil tilsætte 500-1000 g sukker et par dage henne i gæringen for at hæve alkohol-procenten et par streger. D. 27/7: Aktiviteten fra gærtanken aftaget meget. Koger sukker med ca 1/2 liter vand. Sukker: 150 g muscovadosukker og 520 g rørsukker. Omstikkes d. 5/8. SG=1020. Duft lidt speciel, men ikke værre end ved enkelte andre øl jeg har brygget... Det plejer at rette sig under sekundær gæring. Er spændt på om SG falder endnu et par streger. Det ville være godt.
